Lemon & Poppy Seed Cookies

  1. Turn the oven on to 180 degrees celsius. slice the room-temperature butter into a bowl and mix it with the cane suger and brown sugar until somewhat fluffy.

  2. Add lemon zest, lemon juice, vanilla and egg; mix again.

  3. If you're a nerd, mix the dry ingredients (flour, baking powder, poppy seeds & salt) in a bowl and sift it into the mixture -- If you're like me just pour it all in haphazardly -- mix again.

  4. Chop the chocolate into little pieces and mix it in.

  5. Taste the cookie dough.

  6. Roll the mixture into 9-12 balls and put them on a baking sheet, then press them slightly down.

  7. Put it in the oven for 8-12 minutes depending how you like your cookies. I like mine chewy, so they'll be in the oven until the surface starts forming little crevices like a dried out lake, but before they form a crust on the top.
