Lemon & Poppy Seed Cookies
- 200g All-purpose flour
- 150g Butter
- 100g Cane sugar
- 100g Brown sugar
- 100g Blond chocolate (or white chocolate)
- 1 Egg
- 1 Lemon
- 1 Tsp. baking powder
- Pinch of salt
- Pinch of vanilla
- Poppy seeds ad lib.
Turn the oven on to 180 degrees celsius. slice the room-temperature butter into a bowl and mix it with the cane suger and brown sugar until somewhat fluffy.
Add lemon zest, lemon juice, vanilla and egg; mix again.
If you're a nerd, mix the dry ingredients (flour, baking powder, poppy seeds & salt) in a bowl and sift it into the mixture -- If you're like me just pour it all in haphazardly -- mix again.
Chop the chocolate into little pieces and mix it in.
Taste the cookie dough.
Roll the mixture into 9-12 balls and put them on a baking sheet, then press them slightly down.
Put it in the oven for 8-12 minutes depending how you like your cookies. I like mine chewy, so they'll be in the oven until the surface starts forming little crevices like a dried out lake, but before they form a crust on the top.
